Apple Fritters by Kerry Spencer
Sift together the first four ingredients.
Add the milk and egg to the dry ingredients and beat until smooth with a spoon.
Add the chopped apples to the mixture and blend them in with the spoon until incorporated.
In a separate 4" deep bowl with cover, combine the remaining 3/4 Cup of sugar with the cinnamon and stir to combine and set aside.
How to make
Drop by teaspoonfuls into 1 1/2" vegetable oil that has been brought to 375 degrees in a deep fry pan. Leave to cook in oil for four minutes or until brown. Remove with a slotted spoon and drain on paper towel. Add to bowl with the cinnamon/sugar mixture and cover with lid to shake gently to coat. Then store in a clean tin or storage container for freshness. Enjoy!
